Herald Alishan Gaba Oolong goes through a unique finishing step after picking where the unfinished tea (maocha) is rested in a nitrogen-flushed environment; this is also known as anaerobic fermentation We’ve found that this method accentuates the natural flavors of the tea, adding a buttery, caramel-like complexity. Our GABA tea is produced using 100% hand-picked, high-mountain oolong from Alishan, Taiwan. We stand by this offering as a profoundly delicious tea that is a testament to the quality of high-mountain Alishan tea, and the exquisite depth of flavor that was brought out in the crafting of this oolong. The tea is extremely layered, and continues to open up after many infusions.
